	I love carrot cake. Usually I follow the recipe in joy of cooking for oil cake, cutting the sugar by a third and adding a 1/2 teaspoon fresh minced ginger.  for  the frosting I make a buttery cream cheese lemon topping with grated lemon zest.....

one of my saddest birthdays ever was when i was all alone and sad and poor but i took my money and got cream cheese and carrots and made a carrot cake. it was a cute square one and i frosted it and decorated it and was going to sit down and eat it and then two people came by and ate all my cake and left me alone with the empty dish.
